I would like some recomendations on bed and hot end temps for PETG on an Ender 5 Plus and how far (in mm) to set the hot end to bed gap ? Thanks for the help.

For petg bed 80 C and hotend 235 a 240 C.
For pla take sheet of paper 0.08 mm. For petg a little more distance :add 0.15 to 0.25mm. You can add this value in cura slicer when you install from Marketplace Z offset setting.
Slowdown your print speed to 50 mm /s. Fan off or 30 %. If stringing increase retraction distance. It depends from filament type.
